vineyards and orchards - organically farmed or untended apple, pear, and plum orchards dating back to the 1860s; organically farmed vinifera vineyards dating to early 1980s. Multiple acres of planting projects 2021-current of hybrid grapes, quince, apples and pears, across friendly farmsteads on the San Juan Islands and Salish Sea region.

fruits - all the fruits that thrive in a maritime temperate climate, despite the quickly changing climactic world around us: grapes (hybrid, vinifera, table), apples (eating varieties, cider varieties, crabapples), pears (eating varieties and seedling), plums, quince, medlar and berries including blackberries, salmonberries, and hawthorne.

winemaking - no additions at any time (no sulfites, yeasts, or sugars added), Nic is a fourth generation natural winemaker and has only ever made natural wines in their most true form.
